ingredients
- 1/2 pound pasta of choice, cooked according to package instructions
- 1/4 cup reserved pasta water
- 1 medium zucchini, sliced `
- 4 garlic cloves, minced
- 2 tablespoons Wesson Vegetable Oil
- 2-3 tablespoons parmesan (use vegan for dairy-free)
- 1 1/2 tablespoons fresh lemon juice
- 1 tablespoon Wesson Plant Butter with Olive Oil
- 1-2 fresh basil leaves, chopped
- Kosher salt and freshly ground pepper, to taste
Method
Step 1
In a skillet over medium heat, add Wesson Vegetable Oil. Once warm, add in garlic and saute until fragrant, approximately 2-3 minutes. Followed by zucchini and saute until softened, about 5-7 minutes.
Step 2
Add the cooked pasta and reserved pasta water into the skillet and toss until fully combined. Stir in lemon juice, basil and parmesan.
Step 3
Plate and top with a pat of Wesson Plant Butter with Olive Oil. Season with salt and pepper. Serve immediately.
