Zucchini Pasta

  • 1/2 pound pasta of choice, cooked according to package instructions
  • 1/4 cup reserved pasta water
  • 1 medium zucchini, sliced `
  • 4 garlic cloves, minced
  • 2 tablespoons Wesson Vegetable Oil
  • 2-3 tablespoons parmesan (use vegan for dairy-free)
  • 1 1/2 tablespoons fresh lemon juice
  • 1 tablespoon Wesson Plant Butter with Olive Oil
  • 1-2 fresh basil leaves, chopped
  • Kosher salt and freshly ground pepper, to taste


  • Step 1

    In a skillet over medium heat, add Wesson Vegetable Oil. Once warm, add in garlic and saute until fragrant, approximately 2-3 minutes. Followed by zucchini and saute until softened, about 5-7 minutes.

  • Step 2

    Add the cooked pasta and reserved pasta water into the skillet and toss until fully combined. Stir in lemon juice, basil and parmesan.

  • Step 3

    Plate and top with a pat of Wesson Plant Butter with Olive Oil. Season with salt and pepper. Serve immediately.
