- 10 asparagus spears, trimmed and chopped
- 4 large eggs
- 1 cup crumbled feta cheese
- 1 tablespoon olive oil
- Kosher salt, to taste
- 1 teaspoon dried oregano
- 1 teaspoon black pepper
- 1 teaspoon red pepper flakes
- 1/2 cup heavy cream
- 10 cherry tomatoes, halved
- 5 sliced of prosciutto, chopped
Method
Step 1
Preheat the oven to 400°F.
Step 2
In a skillet, heat olive oil over medium heat. Add asparagus and cook for 3-4 minutes until slightly tender.
Step 3
In a large bowl, whisk together eggs, heavy cream, salt, black pepper, red pepper flakes, and dried oregano.

Add cooked asparagus, crumbled feta, cherry tomatoes, and chopped prosciutto to the egg mixture. Stir to combine.
