ingredients
- 4 tablespoons unsalted butter
- 1 cup whole milk
- 1/2 cup plus granulated sugar
- 1 tablespoon active dry yeast
- 4 cups all-purpose flour, plus more for rolling
- 2 large eggs
- 1/2 teaspoon kosher salt
- 1 teaspoon vanilla extract
For Frying, Filing and Coating
ingredients
- 2 quarts vegetable oil
- 1 cup Nutella®
- 1/2 cup granulated sugar
Method
Step 1
In a bowl of a stand mixer, add yeast, warm milk, and sugar until combined. Let stand for 10 minutes, or until the yeast is foamy and dissolved.
Step 2
Add in softened butter, 3 cups of flour, and salt, stirring until absorbed. With the mixer on low speed, gradually add in the remaining flour until combined. You can add 1-2 Tbsp extra if it is too sticky. Increase speed to medium-low and knead until the dough is smooth and elastic for about 5 minutes.
Step 3
Shape the dough into a ball and place it inside a greased mixing bowl. Turn to coat. Cover with plastic wrap and allow to rise until doubled in size, about 1 to 1 ½ hours. Punch the dough down.
Step 4
Line 2 baking sheets with parchment paper. Transfer the dough to a lightly floured work surface. Roll out until 1/2-inch thick. Using a 3-inch round cutter, cut out as many rounds as possible and transfer them to the baking sheets. Let them rise for around 1 hour.
Step 5
While the doughnuts are proofing, heat vegetable oil in a large pot. Heat the oil to 350°f then fry 5-6 at a time until golden brown on all sides; around 4-5 minutes. Drain on a paper towel, then while they are still warm, roll in the granulated sugar.
Step 6
Place the Nutella in a piping bag with a round tip. Once the donuts are cool enough to handle, use a toothpick to poke a hole in one side. Using the piping bag, pipe a generous amount of Nutella into the center of the dough circle until it's full. Enjoy immediately!
