For the cake
ingredients
- 1/4 cup olive oil
- 1/2 cup coconut sugar
- 2 tablespoons smooth peanut butter
- 4 tablespoons cocoa powder
- Pinch of salt
- 3/4 cup oat flour
- 2 eggs
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
For the frosting
ingredients
- 4 tablespoons smooth peanut butter
- 3 tablespoons honey
- Pinch of salt
Method
Step 1
Preheat the oven to 180C or 355F and line a brownie or loaf tray with greaseproof paper (or grease with coconut oil)
Step 2
In a bowl, cream together the nut butter and coconut sugar together, then crack in the eggs one at a time, mixing thoroughly.
Step 3
Combine the dry ingredients, then fold these into the wet mixture. Pour your cake batter into your baking tray and pop this into the oven for around 16 minutes.
Step 4
Once your cake is baked (it might still be slightly soft on top until cooled- that’s fine) allow to cool completely.
Step 5
Meanwhile, mix together the peanut butter, honey and salt to create a smooth, creamy icing.
Step 6
Spread this generously on top of your sheet cake and slice into squares.
