Eggplant Pizza Melts

- Olive oil spray
- 2 medium eggplants, cut in 1/4 inch thick rounds
- 1 (25.5 ounce) jar Muir Glen Tomato Basil Pasta Sauce
- 2 cups shredded mozzarella and provolone cheese blend
- Mushrooms, sliced, for topping
- Olives, for topping
- Basil, for garnish
Preheat oven to 400ºF.
Lightly coat a baking tray with olive oil. Arrange the eggplant slices on the tray. Bake 5-8 minutes. Flip eggplant slices and layer sauce, cheese, and any toppings. Broil for about 5 minutes, until cheese is melted.
