Sometimes, when recipes go viral on Instagram or TikTok, it's kinda like, why? Let me be the first to tell you: this is not the case with this Grinder Sandwich. The "Grinder Salad" that goes on top of delicious meats and cheeses is so good, I've been eating it on its own. Feel free to play around with what meats and cheeses you use, but do not sleep on the bold flavors in the Grinder Salad. Grab a good quality mayo (I used Duke's) and slice your iceberg lettuce niiice and thin. It can get a little messy, but I envsion myself packing up this sandwich for beach and pool days all summer long.

For the Grinder Salad:

ingredients

  • 1/2 cup mayonnaise
  • 1 large clove of garlic, microplaned
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon Kosher salt
  • Black pepper, freshly ground, to taste
  • 1/2 cup pepperoncini
  • 1/3 cup parmesan cheese, shaved
  • 1/4 cup red onion, thinly sliced
  • 1 medium head of iceberg lettuce, thinly sliced

For the Sandwich:

ingredients

  • 1 hoagie, or any crusty bread (can swap for gluten-free option)
  • Sharp cheddar cheese, sliced
  • 1/4 pound cracked pepper turkey, thinly sliced
  • 1/4 pound honey ham, thinly sliced
  • 1/4 pound sopressata
  • 1 large roma tomato, thickly sliced
  • Kosher salt, to taste
  • Black pepper, freshly ground, to taste

For the Grinder Salad:

Method

  • Step 1

    In a large bowl, add mayonnaise, spices, pepperoncini, parmesan, and red onion. Stir to combine.

  • Step 2

    Add iceberg lettuce to the bowl and mix until combined. Set aside.

For the Sandwich:

  • Step 1

    Preheat oven to 350 degrees F.

  • Step 2

    Slice hoagie roll and scoop out the center. Arrange cheese along both sides of the bread and toast until cheese is melted, about 5-7 minutes.

  • Step 3

    Assemble the sandwich. Layer turkey, ham, and sopressata on one side of the hoagie roll. Add sliced tomatoes and season with salt and pepper.

  • Step 4

    Using tongs, add Grinder Salad atop the seasoned tomatoes. Add the top of the hoagie roll, slice in half, and enjoy!
