Vegan Pesto Pasta

This vegan pasta has the perfect combination of comfort and vegetal freshness. A classic pesto pasta is studded with sautéed kale and leeks to pack extra flavor you didn't know you needed!

Serves or Makes: 2
- 1 tablespoon olive oil
- 2 leeks, rinsed and chopped
- 4 cups kale, washed and cut
- 8 ounces casarecce pasta
- 6 tablespoons vegan pesto
- 1 1/ 4 cups cooked edamames
- 1 tablespoon hemp seeds
Add a tablespoon of olive oil to a large pan and add your leeks and kale. Sauté them for a few minutes until tender (add some water if needed).
While your veggies are cooking, cook your pasta according to the instructions. Drain them and keep some cooking water aside.
Then add your pasta and cooked edamames to the veggies, the cooking water and add the green pesto and mix everything.
Finally, serve it into a bowl and topped with hemp seeds.
