For the Salad
ingredients
- 2 cups carrots, cut into matchsticks
- 2 cups beets, cut into matchsticks
- 2 cups apple, cut into matchsticks
- 2 cups roughly chopped spinach
- 2 cups roughly chopped parsley
- 1 avocado
- 1/2 cup goji berries, soaked in water for a few minutes
- 1/4 cup hemp hearts
- 1/4 cup sunflower seeds
For the Dressing
ingredients
- 3 tablespoons tahini
- Water, as needed to thin the dressing
- 1 tablespoon balsamic vinegar
- 2 teaspoons maple syrup
- Salt and black pepper, as needed
Method
Step 1
In a large bowl, combine all salad ingredients. In a separate small bowl, whisk together all dressing ingredients. Toss salad with dressing and serve immediately.
