Carrot, Beet and Apple Salad with Maple Tahini Dressing

"I was working then all of a sudden I started craving this salad I used to get at a market close to my apartment when I lived in Ottawa and since I can’t just run and get it, i tried to make a similar salad anddd I think I did pretty damn good!"

They say we eat with our eyes first and this recipe is no exception to this rule! Colorful carrots, beets and apples are mixed with a sweet and nutty dressing to finish off this gorgeous salad.

For the Salad


  • 2 cups carrots, cut into matchsticks
  • 2 cups beets, cut into matchsticks
  • 2 cups apple, cut into matchsticks
  • 2 cups roughly chopped spinach
  • 2 cups roughly chopped parsley
  • 1 avocado
  • 1/2 cup goji berries, soaked in water for a few minutes
  • 1/4 cup hemp hearts
  • 1/4 cup sunflower seeds

For the Dressing


  • 3 tablespoons tahini
  • Water, as needed to thin the dressing
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons maple syrup
  • Salt and black pepper, as needed


  • Step 1

    In a large bowl, combine all salad ingredients. In a separate small bowl, whisk together all dressing ingredients. Toss salad with dressing and serve immediately.
