Ingredients:
4 everything bagels
1/4 cup whipped cream cheese
1/4 cup chimichurri or pesto
1/2 cup sliced onions
2 Handfuls sautéed spinach
2 slices of cherrywood bacon, cooked until crisp
4 poached eggs, Watch video tutorial on how to poach an egg here
olive oil, as needed
Directions:
Caramelize onions in pan over medium-low heat with a bit of olive oil until tender and golden brown. Add spinach, cook until slightly wilted and remove from heat. Divide the cream cheese among the four bagels, top with onions, spinach, bacon, chimichurri and poached eggs.
