ingredients
- 1 small chopped lettuce
- 1/2 pint cherry tomatoes
- 1 can (19 oz) drained and flaked tuna
- 3 chopped green onions
- 1/2 sliced English cucumber
- 1/4 pitted and halved Kalamata olives
- 3 quartered hard-boiled eggs
- 1 can 2 oz (56g) anchovies, drained
- 1/3 cup olive oil
- 1 tablespoon lemon juice
- 1 tablespoon white vinegar
- 2 tablespoons Dijon mustard
- 1 minced garlic clove
- salt and pepper
Method
Step 1
Mix lettuce, tomatoes, tuna, onions, cucumber and olives in a large bowl. Place the anchovies and eggs on top.
Step 2
Make the dressing by mixing the olive oil, vinegar, mustard, and garlic.
Step 3
Add the dressing just before serving and bon appetite!
