ingredients
- For the Crust:
- 1 3/4 cups flour
- pinch of salt
- 2 tablespoons sugar
- 7 ounces vegan margarine
- 6 tablespoons olive oil
- For the Filling:
- 1 pound plums, sliced
- 2 teaspoons cinnamon
- 1/2 teaspoon ginger
- 1/2 teaspoon all spice
- 2 tablespoons sugar
- 1/2 lemon, juiced
- 2 tablespoons cornstarch
Method
Step 1
Add flour, salt, sugar and margarine to a food processor and process until crumbly (or use your fingers). Mix the oil with 6 tablespoons of cold water and gradually add to the crumbs until a dough forms.
Step 2
Flatten into two discs and wrap in plastic film for at least 30 mins. Roll out one pastry disc and line tart tin.
Step 3
Add sliced plums to a large bowl and coat in ginger, all spice, sugar, lemon juice and cornstarch. Stir well to coat.
Step 4
Roll out second disc of pastry and cut out desired shapes. Fill tart with plums and cover with pastry.
Step 5
Bake in the oven for 40-45 minutes, until golden and crispy.
