"Let's celebrate Persian New Year with these beautiful chickpea cookies!🌸 "Nokhodchi" is a traditional Persian cookie baked mostly around the new year (which is the 1st day of spring)🍃 They're made with fine chickpea flour and have a hint of cardamom & pistachio.♥"

Recipe Card

ingredients

  • 1/3 cup sifted powdered sugar
  • 1/2 teaspoon ground cardamom
  • 1/4 cup vegetable oil
  • 1 cup sifted fine chickpea flour
  • Ground pistachio, for decoration

Method

  • Step 1

    Beat powdered sugar, cardamom and oil for 3 mins

  • Step 2

    Add chickpea flour and beat 1 more minute

  • Step 3

    Knead the dough 10 mins, if you feel it’s too dry add more oil (1tbs at a time)

  • Step 4

    Let it rest for 2 hrs (at room temp)

  • Step 5

    Preheat the oven to 300F

  • Step 6

    On a floured surface, roll out the dough to ½ inch thick. Cut out as many cookies as you can

  • Step 7

    Transfer to a baking sheet covered with parchment paper, decorate with pistachio and bake for about 15 mins but keep an eye on them after 10 mins (always bake 1 cookie first and time it to see how it goes, you don’t want to burn the whole batch! :D )

  • Step 8

    Let them cool on the baking sheet for at least 15 mins because they’re fragile when hot.

  • Step 9

    Decorate with more ground pistachios and rose petals if you like!
