ingredients
- 1 cucumber, sliced
- 1/2 cup blackberries
- 3 tbsp pumpkin seeds, toasted
- 4 stalks of dill, chopped
- 1/4 cup sour cream
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- 1 teaspoon honey
- Salt and black pepper, to taste

Step 1
In a bowl, whisk the sour cream with oil, vinegar and honey, season with salt and pepper. Add the cucumber slices, blackberries and dill. Stir to combine. Top with pumpkin seeds and enjoy!
