Valentine's Day Brunch Board

For the Mini Pancakes

  • 1 cup oat flour
  • 2 tablespoons granulated sugar
  • 1/ 2 teaspoon baking powder
  • Pinch of salt
  • 1 1/ 3 cup oat milk, plus more if needed
  • 1/ 2 teaspoon vanilla extract

For the Board

  • Strawberries
  • Raspberries
  • Blackberries
  • 1/ 2 cup Assorted nuts and seeds of choice
  • Dark chocolate, broken into large pieces
  • Chocolate covered pretzels
  • LARA BAR MINI Chocolate Cherry Truffle Bars
  • Maple syrup, for drizzling to taste

For the Mini Pancakes


  • Step 1

    In a medium sized bowl, whisk together the oat flour, granulated sugar, baking powder and salt.

  • Step 2

    In a separate bowl, add the egg, milk and vanilla extract. Mix until smooth.

  • Step 3

    Add the wet ingredients to the dry ingredients and whisk until well combined.

  • Step 4

    Preheat a nonstick pan over medium heat and spoon 1 tablespoon of batter on the heated pan and cook for 45 seconds on each side.

To Assemble


  • Step 1

    Arrange generous piles of silver dollar pancakes, strawberries, raspberries and blackberries on a large board. Add small bowls of dark chocolate and assorted nuts. Add LARABAR Mini Chocolate Cherry Truffles and serve this brunch board with mimosas and lattes.
