Snacking from a charcuterie board, cheese platter, or brunch board is one of my favorite ways to entertain. They’re easily customizable depending on the company, the season and occasion. Valentine’s day breakfast or brunch doesn't have to be extravagant, it can be as simple as berries, chocolate, mini pancakes that come together in 10 minutes. Complete the brunch board with Larabars Mini Chocolate Cherry Truffles, lattes and OJ.

For the Mini Pancakes
ingredients
- 1 cup oat flour
- 2 tablespoons granulated sugar
- 1/2 teaspoon baking powder
- Pinch of salt
- 1 1/3 cup oat milk, plus more if needed
- 1/2 teaspoon vanilla extract
For the Board
ingredients
- Strawberries
- Raspberries
- Blackberries
- 1/2 cup Assorted nuts and seeds of choice
- Dark chocolate, broken into large pieces
- Chocolate covered pretzels
- LARA BAR MINI Chocolate Cherry Truffle Bars
- Maple syrup, for drizzling to taste
For the Mini Pancakes
Method
Step 1
In a medium sized bowl, whisk together the oat flour, granulated sugar, baking powder and salt.
Step 2
In a separate bowl, add the egg, milk and vanilla extract. Mix until smooth.
Step 3
Add the wet ingredients to the dry ingredients and whisk until well combined.
Step 4
Preheat a nonstick pan over medium heat and spoon 1 tablespoon of batter on the heated pan and cook for 45 seconds on each side.
To Assemble
Step 1
Arrange generous piles of silver dollar pancakes, strawberries, raspberries and blackberries on a large board. Add small bowls of dark chocolate and assorted nuts. Add LARABAR Mini Chocolate Cherry Truffles and serve this brunch board with mimosas and lattes.
