- 4 medium sweet potatoes
- 2 tablespoons avocado oil
- Salt and Pepper to taste
- 2 avocados, sliced
- fresh lemon juice
- Red pepper flakes
Preheat oven to 375℉.
Chop sweet potatoes into wedges.
Drizzled them with avocado oil and season with salt and black pepper.
Roasted on a baking sheet with parchment paper at 375℉ for 25 minutes, flipping halfway through.
Then broil for about 5 minutes.
Serve with mashed avocado in lemon juice and red chili flakes.
