Serves or Makes: 5-6 fritters

ingredients

  • 1 medium zucchini
  • 1/4 cup crumbled feta cheese
  • 2-3 tablespoons gluten-free all-purpose flour
  • 1 egg
  • 1/2 green chili
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons olive oil
  • Parsley, to garnish
  • Greek yogurt, optional
  • pinch Sumac, optional

Method

  • Step 1

    Grate the zucchini with a box grater. Place the grated zucchini in a clean tea towel and ring out any excess liquid.

  • Step 2

    Combine the zucchini with the feta, flour, egg, chili and a pinch of salt and pepper.

  • Step 3

    Heat a non-stick frying pan over a medium heat and add the oil. Fry the fritters for 2-3 mins on each side until golden brown. Serve straight away. (If oily, place the cooked fritters on some kitchen paper to take away any excess oil).

  • Step 4

    Serve with parsley, Greek yogurt and a pinch of sumac (optional).
