Rumor has it Florence Pugh loves a Full English Breakfast on days off. We couldn't resist making the star's favorite breakfast recipe. 

This recipe serves 2, so cut the measurements in half if you're dining solo.

ingredients

  • 1 large potato, cut into small cubes
  • 3 tablespoons olive oil, divided
  • 2 teaspoons kosher salt, divided
  • 2 teaspoons black pepper, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 8 strips bacon
  • 12 ounces mushrooms, sliced
  • 1/2 teaspoon red pepper flakes
  • Fresh lemon juice
  • 2 roma tomatoes, sliced
  • 4 slices sourdough bread
  • 1 (12 ounce) can baked beans
  • 4 eggs
  • Fresh chives, finely chopped, for serving

Method

  • Step 1

    Preheat oven to 400°F and line a large baking sheet with parchment paper. Pour the potato cubes onto the sheet and drizzle on 1 tablespoon olive oil, 1 teaspoon salt, 1 teaspoon black pepper, 1 teaspoon garlic powder, and 1 teaspoon paprika. Toss to evenly coat, then bake for 45 minutes, or until golden brown and crispy on the outside.

  • Step 2

    Line a second baking sheet with parchment and place the bacon strips onto the parchment, spaced 1 inch apart. Place into the preheated oven to bake for 20-30 minutes, or to your desired doneness.

  • Step 3

    Meanwhile, sauté mushrooms. Heat 1 tablespoon olive oil in a large pan over medium-high heat. Add in mushrooms and cook, stirring frequently, until golden brown. Once nearly done cooking, season with 1/2 teaspoon salt, 1/2 teaspoon black pepper, and 1/2 teaspoon red pepper flakes. Squeeze on some fresh lemon juice, then set mushrooms aside.

  • Step 4

    Next, make the tomatoes. Coat both sides of the tomato slices in olive oil, salt, and pepper. Heat a grill pan or large cast iron skillet over medium-high. Place the tomatoes down onto the pan and cook for about 3 minutes per side. Set aside.

  • Step 5

    In a medium pot over medium heat, gently heat up the baked beans. Toast the pieces of bread to your liking.

  • Step 6

    Heat 1/2 tablespoon olive oil in a large pan over medium-high heat. Crack in 2 eggs and cook until the whites are set, about 5 minutes, for a sunny-side up egg. Repeat for additional 2 eggs if you want more eggs.

  • Step 7

    Plate everything together - roasted potatoes, crispy bacon, sautéed mushrooms, seared tomatoes, baked beans, toast, and fried eggs. Top with fresh chives. Enjoy!
