This avocado toast is taken up SEVERAL notches. It's got bacon and tomato, so it's pseudo BLT-like. It also is topped with a grated hard boiled egg, which is a hack that's become a huge trend on social media! This mega-toast is bursting with flavor and textures, and may be a bit difficult to eat without making a mess, but it's so worth it.

ingredients
- 1 egg
- 2 pieces bacon
- 1 piece thick sliced crusty bread, toasted
- 1 tablespoon Kewpie mayonnaise
- 1/2 avocado, cut into thin slices
- 1 teaspoon fresh lemon juice
- Kosher salt, to taste
- freshly cracked black pepper, to taste
- crushed red pepper flakes, to taste
- hot honey, to taste
- 1 large slice fresh tomato
- everything bagel seasoning, to taste
- fresh chives, finely chopped, for garnish
Method
Step 1
Start by hard-boiling the egg. Bring a small pot of water to a rolling boil, then place the egg in for 12 minutes. Once done, remove egg from water and place into a bowl of cool water to stop the cooking. Once cool, peel the egg.
Step 2
Meanwhile, cook the bacon in a small pan over medium-high heat. It's up to you how crispy you like your bacon, but we recommend letting it get nice and crispy to add a nice texture to the sandwich, which should take 8-10 minutes.
Step 3
Assemble the toast. Spread Kewpie mayonnaise over the toast, then top with sliced avocado. Sprinkle avocado with fresh lemon juice, salt, pepper, red pepper flakes, and hot honey. Next, add the cooked bacon and tomato slice. Add a little extra salt on the tomato.
Step 4
Now, use a cheese grater to grate the hard-boiled egg on top of the tomato. It should create a nice fluffy pile. Top grated egg with everything bagel seasoning and chives. Enjoy, and don't be afraid to make a mess!
