ingredients
- 3 eggs
- 1/3 cup water
- 1 tablespoon freshly squeezed meyer lemon juice
- 2 meyer lemons, zested
- 1 (11.5 ounce) box Simple Mills Vanilla Cupcake & Cake Mix
- 1 (10 ounce) tub Simple Mills Vanilla Frosting
- Dark chocolate, shredded for decoration
- Meyer Lemon Zest, for decoration
- Easter chocolate candies, for decoration
Method
Step 1
Preheat oven to 350 F.
Step 2
In a large bowl, whisk together eggs, oil, water, lemon juice and lemon zest. Add baking mix and whisk until well blended.
Step 3
Spoon batter into 12 paper-lined muffin cups, filling each 2/3 full and bake for about 17 minutes. Let them cool completely.
Step 4
Decorate with vanilla frosting, shredded chocolate, lemon zest and candies. Enjoy!
