ingredients
- 1 pound ground chicken
- 1/3 cup almond flour
- 1/3 cup grated parmesan
- 1 egg
- 2 tablespoons olive oil
- Onion powder, to taste
- Salt, to taste
- Pepper, to taste
- Dried parsley, to taste
- Dried basil, to taste
- 1 1/2 cups tomato basil marinara sauce
- Shredded mozzarella, for topping
Method
Step 1
Preheat oven to 400°f and line baking sheet with parchment paper or aluminum foil. Use a cookie scoop to measure out evenly sized meatballs and arrange on the baking sheet. Bake for 25 minutes.
Step 2
While the meatballs are baking, warm a jar of marinara in a large pan on low heat. Add the chicken meatballs when they are done cooking, generously top with shredded mozzarella & cover for 2-3 minutes, or until mozzarella is melted.
