Roasted Salmon with Lemon, Garlic and Herbs

  • 3 tablespoons olive oil
  • Juice from 1 lemon, plus zest
  • 1 large garlic clove, minced
  • 2 teaspoons Herbs de Provence
  • 1/4 teaspoon coriander
  • Salt and freshly ground pepper, to taste
  • 1 pound salmon


  • Step 1

    Preheat the oven to 450 degrees F.

  • Step 2

    In a bowl, combine olive oil, lemon juice, zest, garlic, Herbs de Provence, coriander. Season to taste, set aside.

  • Step 3

    Season both sides of salmon with salt and pepper. Place in a baking dish, brush tops with lemon mixture, roast for 13 minutes. Spoon half of the mixture over the salmon. Place back in the oven for 2-5 more minutes, or at an internal temperature of about 130-135 degrees F.

  • Step 4

    Remove salmon from oven, and serve by spooning a few more tablespoons of the lemon mixture on top of the salmon. Serve immediately along with your favorite side.
