Easy Pot Roast with French Onion Soup

A pot roast that doesn't require a lot of prep work-yes, please! This is a straightforward step-by-step recipe in which you simply combine all of the ingredients in a pan, set it in the oven, and forget about it. This dish is made simple and tasty by braising a juicy chuck roast in canned French onion soup. A good sprinkling of gruyere is also reccomended.

ingredients
- 4-5 lbs boneless beef chuck roast
- Salt and freshly ground pepper, to taste
- 5 (10oz) cans French onion soup
- 1 yellow onion, chopped
- 2 carrots, peeled and sliced into rounds
- 3 celery stalks, chopped
- 1 lb baby red potatoes, quartered
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- Fresh parsley, for garnish
Method
Step 1
Preheat oven to 300 degrees F.
Step 2
Season both sides of roast generously with salt and pepper. Place in a 12x10x2 inch roasting pan or large Dutch oven. Add onion soup followed by onion, carrots, celery potatoes, thyme, and rosemary. Season again with a heavy pinch of salt and pepper.
Step 3
Cover pan tightly with foil and roast for 4 hours.
Step 4
Remove from oven and allow to cool slightly. Roast should be fork tender. Serve immediately garnished with fresh parsley.
