Who doesn't enjoy a good bowl of noodles? This recipe is easily customizable to any items you have on hand in your refrigerator. This filling can be eaten at any time of day thanks to the addition of scrambled eggs. Try adding this Chili Crisp for a touch of heat!

ingredients

  • 150 grams Chinese egg noodles
  • 6 tablespoons toasted sesame oil, plus more for drizzling
  • 4 large eggs, beaten
  • 4 garlic cloves, minced
  • 4 scallions, cut into 3-inch pieces
  • Kosher salt, to taste
  • Black pepper, to taste
  • 1 tablespoon toasted white sesame seeds, for garnish

Method

  • Step 1

    In a pot boiling water, add the noodles and cook halfway according to the package instructions. When partially cooked, drain, and toss with 1 tablespoon of sesame oil and set aside.

  • Step 2

    In a non-stick pan, heat 1 tablespoon of oil. Whisk the eggs. Pour into the heated pan and scramble. Set aside.

  • Step 3

    In a wok, heat 3-4 tablespoons of sesame oil. Add garlic to the hot oil and give it a quick stir.

  • Step 4

    Add scallions, toss, followed by noodles, and scrambled eggs.

  • Step 5

    Season with salt and pepper.

  • Step 6

    Remove from heat and serve with a drizzle of sesame oil and a sprinkle of toasted sesame seeds.
