ingredients
- 1 large ripe avocado, diced
- 1/4 cup brewed coffee, cold
- 2/3 cup coconut sugar
- 2 large eggs, room temperature
- 1/2 cup unsweetened, natural cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon Kosher salt
- 1/2 cup oat flour
- 2/3 cup dark chocolate chips, divided
Method
Step 1
Preheat the oven to 350°F. In a blender, add the avocado, coffee, sugar, eggs, cocoa powder, baking powder, salt, and oat flour. Blend well.
Step 2
Add 1/2 cup chocolate chips into the batter and incorporate. Grease an 8 x 8 inch pan. Transfer batter into the pan, and top with the remaining 1/3 cup chocolate chips. Bake for 20-25 minutes.
