These brownies are ooey, gooey, fudgy, and they're better for you than traditional brownies! The avocado in the recipe gives them a ridge, fudgy texture, and there's plenty of chocolatey flavor.

ingredients

  • 1 large ripe avocado, diced
  • 1/4 cup brewed coffee, cold
  • 2/3 cup coconut sugar
  • 2 large eggs, room temperature
  • 1/2 cup unsweetened, natural cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon Kosher salt
  • 1/2 cup oat flour
  • 2/3 cup dark chocolate chips, divided

Method

  • Step 1

    Preheat the oven to 350°F. In a blender, add the avocado, coffee, sugar, eggs, cocoa powder, baking powder, salt, and oat flour. Blend well.

  • Step 2

    Add 1/2 cup chocolate chips into the batter and incorporate. Grease an 8 x 8 inch pan. Transfer batter into the pan, and top with the remaining 1/3 cup chocolate chips. Bake for 20-25 minutes.
