  • 2 large boneless chicken breasts (or skin-on, if preferred)
  • 6 tablespoons olive oil, divided
  • 1 teaspoon paprika
  • 1 teaspoon minced garlic
  • 1 teaspoon onion powder
  • 1 teaspoon fresh chopped rosemary
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon unsalted butter
  • 1/2 small yellow onion, diced
  • 2 medium carrots, diced
  • 3 celery ribs, diced
  • 1 package fresh herbs (thyme, sage, rosemary), chopped
  • 3 1/2 cups chicken broth
  • Pre-made stuffing cubes

Method

  • Step 1

    Preheat the oven to 450°F. Lightly oil a baking sheet with cooking spray or a brush of olive oil.

  • Step 2

    Heat 3 tablespoons olive oil in a skillet over medium heat. Add diced onion, carrots, and celery, and cook until softened. Transfer to a bowl and set aside.

    In a medium bowl, coat the chicken breasts with paprika, garlic, onion powder, rosemary, salt, pepper, and 3 tbsp Better Than Bouillon Roasted Chicken Base.

  • Step 4

    Add 3 tablespoons olive oil to the skillet and sear the chicken breasts over medium heat for 3-5 minutes on each side until golden brown. Place the seared chicken on the greased baking sheet.

    Melt 1 tablespoon butter in the same skillet. Add the softened vegetables, pre-made stuffing cubes, and chicken broth. Mix well until the stuffing cubes absorb the liquid. Remove from heat and fluff with a fork. (It’s okay if the stuffing is slightly soggy—it will crisp up in the oven.)

    Arrange the chicken breasts on the prepared baking sheet. Spoon the stuffing mixture around the chicken, spreading it to cover the pan completely.

    Cook in the preheated oven for 35 minutes, or until the chicken reaches an internal temperature of 165°F and the stuffing is golden and crisp.
