ingredients
- 4 slices of bacon
- 2 tablespoons unsalted butter, divded
- 6 large eggs
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- Red pepper flakes, to taste
- Freshly shredded cheddar cheese (about 1/2 cup)
- 2 flour tortillas (or corn tortillas)
- Salsa, for topping
- Avocado (seasoned with salt and pepper), for topping
Cook the Bacon
Method
Step 1
Heat a cast iron skillet over your campfire (or use a portable camp stove).
Step 2
Add the bacon and cook until crispy, about 4-5 minutes on each side depending on the heat.
Step 3
Place the bacon on a paper towel-lined plate and set aside.
Prepare the Eggs
Step 1
Set up your portable camp stove.
Step 2
Crack the eggs into a bowl, whisk, and set aside.
Step 3
Using the same skillet used to cook the bacon (or another pan), melt 1 tablespoon of butter over medium/low heat. (You can also use bacon grease to cook the eggs instead of butter.)
Step 4
Once melted, pour in the eggs and begin to scramble. Cooking low and slow is best to avoid overcooking the eggs.
Step 5
Season with salt, black pepper, and red pepper flakes. Stir occasionally.
Step 6
When the eggs are almost done, add in the shredded cheddar cheese and stir to melt.
Step 7
Remove your eggs from the pan, cover with foil, and set aside.
Toast the Tortillas
Step 1
In the same pan, melt 1/2 tablespoon of butter. Toast the tortillas on both sides until lightly browned.
Step 2
Repeat with the remaining butter and second tortilla.
Assemble the Tacos
Step 1
On each tortilla, layer the scrambled eggs, crispy bacon, salsa, and seasoned avocado slices.
