Grilled Veggie Platter

- 8 shishito peppers
- 2 corn on the cob, cut into chunks
- 1 head cauliflower, chopped into florets
- 2 zucchini, sliced lengthwise
- 1 bunch asparagus, tough woody ends discarded
- Olive oil
- 1 red onion, sliced
- 5 sweet red peppers
- Feta cheese
Heat grill to medium. Toss vegetables with olive oil to coat. Cook on the grill until cooked through and char marks forming, flipping halfway through.
Arrange grilled vegetables on a platter with feta cheese and olives to serve.
