Mint and Coconut Yogurt Yogurt Sauce and Hummus Sandwich

Serves or Makes: 4 sandwiches

For the Mint Yogurt Spread


  • 1 bunch mint
  • 1 serrano pepper
  • 3/4 cup unsweetened coconut yogurt
  • Kosher salt and freshly ground black pepper, to taste

For the Mint Hummus


  • 2 cups chickpeas, boiled or, dried ones that are soaked and cooked or canned ones, rinsed and drained
  • 1 tablespoon juice of a lemon
  • 1/4 cup fresh mint
  • 2 cloves garlic
  • 1/4 cup tahini
  • 1/3 cup olive oil, plus 2 tablespoons
  • Salt to taste
  • 1/4 teaspoon crushed red pepper
  • Few teaspoons of water

For the Sandwich


  • 8 slices bread, (optionally toasted)
  • 1 large tomato, sliced
  • 1 cucumber, sliced
  • 1 cup lettuce, chopped
  • 2 ripe avocados, sliced
  • 1/3 red onion, sliced

Make the Mint Yogurt Spread


  • Step 1

    Blend all of the above ingredients along with 2 cubes of ice in a high speed blender, until smooth and creamy. Check for seasoning and consistency. If the blender finds it difficult to process easily, add a few tablespoons of water and try again. If the spread is too runny, add more mint and coconut yogurt, and blend again until just combined.

Make the Mint Hummus

  • Step 1

    Process all the ingredients in a processor until smooth and creamy. Add some water, if needed, to get the right consistency. Drizzle 2 tablespoons of olive oil before serving.

To Assemble the Sandwiches

  • Step 1

    Spread the mint-coconut yogurt spread on two thick slices of bread. Spread the hummus on one of the slices. Arrange slices of tomatoes, cucumber, avocado, onion and some lettuce. Then sprinkle some salt or any favorite seasoning, serve. Repeat with the remaining ingredients.
