ingredients
- 2 pita bread
- 2 teaspoons olive oil
- 1 cup halloumi, sliced `
- 1/4 head iceberg lettuce, chopped
- 12 cherry tomatoes, chopped
- 12 pitted kalamata olives
- 4 tablespoons tzatziki
- 2 teaspoons dill, chopped
Method
Step 1
Heat frying pan over medium heat and lightly coat with 1 teaspoon olive oil.
Step 2
Place one pita bread into the frying pan and lightly fry on both sides until just golden. Remove pita from the pan and cover with foil to keep warm. Repeat with other pita bread.
Step 3
Drizzle the other teaspoon olive oil into the same frying pan and lightly fry the halloumi on both sides until golden.
Step 4
Assemble your souvlaki by spreading your pita with tzatziki, sprinkling over the dill, then topping with lettuce, tomatoes, olives and halloumi.
Step 5
Wrap up and enjoy.
