This zucchini nests are filled with slow cooked eggs with runny egg yolks! Garnish with lots of fresh herbs, chiles, and flakey salt!

ingredients

  • 2 cups zucchini spirals
  • 2 tablespoons olive oil
  • 2 eggs
  • Fresh cilantro leaves, to taste
  • Red pepper flakes, to taste
  • Salt and pepper, as needed

Method

  • Step 1

    Sauté zucchini spirals in olive oil for 5 minutes until slightly soft. separate into two piles of noodles and create a hole to crack an egg in.

  • Step 2

    Allow to cook on low heat until egg whites settle, about 4-5 mins. slightly cover with lid to cook for another 1-2 minutes!

  • Step 3

    Remove with spatula and enjoy with some fresh cilantro and red pepper flakes on top!
