"did you know the number on a toaster is the amount of minutes it’ll be toasted for? 🍞 my ideal number is 2, perfectly golden with hints of light brown and toasty enough to hold the goods without falling apart. my breakfasts may seem like something different every time, but about 75% of the time it’s toast 🙌🏼 i finally got my hands on some smoked salmon so this combo has been on repeat! sometimes i eat them open faced but mashing the slices together into a sandwich somehow makes it taste so much better! i’m about to make some pour-over or matcha now 🤔🍵☕️ in this sandwich is mashed avocado, a fried @vitalfarms egg cooked in @primalkitchenfoods avocado oil, smoked salmon and tj’s everything but the bagel sesame seasoning blend! my family is coming over for dinner tonight so i’ll be cooking up a little feast later on ☺️🙌🏼 #winniesbalance #breakfast"

ingredients

  • 2 slices any bread, toasted
  • 1 tablespoon avocado oil
  • 1 egg
  • 1-2 pieces smoked salmon
  • 1 avocado, halved, pit removed
  • salt and peper to taste
  • 1 teaspoon everything bagel seasoning

Method

  • Step 1

    Toast two slices of bread of your choice

  • Step 2

    Remove the avocado from its peel into a bowl and mash with a fork.

  • Step 3

    In a small skillet, heat avocado oil. Crack egg into skillet and fry until yolk is desired consistency.

  • Step 4

    Assemble your sandwich. Spread the avocado over the toasted bread slices and top with smoked salmon and the egg. Sprinkle the everything bagel seasoning on top and enjoy.
