"Breakfast fruit tarts w/ a cashew cookie @larabar crust! These are a fun, fruity and nutty twist to your typical fruit tart crust! Also, instead of a custard filling, I added yogurt so this is great for breakfast! all the ingredients are from @sprouts 🙌🏼 Not only is @larabar super tasty but right now they are doing a lot of regenerative research to help sustainable almond farming, Yummy & Saving the Planet."

  • Plain or Vanilla Yogurt
  • 1 box of Strawberry, sliced, to garnish
  • 1 box Blueberries, sliced, to garnish
  • Kiwi, sliced, to garnish
  • Mango, slices, for garnish

Method

  • Step 1

    Preheat oven to 325F. Prepare 4 mini tart pans with nonstick spray.

  • Step 2

    In a small mixing bowl, mash together 4 cashew cookie LÄRABARS and coconut oil. Mix until all ingredients are moistened and texture can form a crust.

  • Step 3

    Press cashew cookie crust into tart pans, evenly on bottom and up sides. Bake for 15 minutes or until golden brown.

  • Step 4

    Allow tarts to cool for 5 minutes before removing from tart pans. Place into the fridge for 15 minutes to firm.

  • Step 5

    Add 1/4 cup yogurt into each tart. Serve immediately topped with fresh fruit.
