Nutella Mousse

Last min EASY dessert for the holidays! You guys know by now I love Nutella, so I wanted to share my Nutella mousse recipe to celebrate the end of the 2021! Be sure to save for later!
INGREDIENTS
• 1 pint heavy cream -- divided in half (you will use half for the mousse and half for the whipped cream, should be cold)
• 1/4 heaping cup Nutella
• 1 1/2 chocolate bars, of decent quality, chopped
• 1/4 cup powdered sugar
• 1/4 teaspoon vanilla
Chocolate and raspberries for garnish
INSTRUCTIONS
Chop chocolate bars and place in a medium size heat proof bowl. In a medium saucepan, heat 1 cup (half of your pint) of heavy cream to a light simmer, do not bring to a boil. Pour warm cream over chocolate and let sit for 2 to 3 mins.
Slowly stir chocolate and cream until the chocolate has completely melted. Add in Nutella and continue to stir until combined.
Let ganache come to room temperature. At this point make your whipped cream. (note, you can also buy whipped cream!)
In a chilled bowl, using a stand mixer or hand mixer, whip 1 cup heavy cream (cream should be cold) until peaks form. Add in powdered sugar and vanilla and whip on high until light and fluffy.
Once chocolate ganache is no longer warm, fold in whipped cream until smooth and combined.
Divide between 4 to 6 dessert dishes, cover and refrigerate for at least 2 hours to set.
Top with whipped cream, shaved chocolate, and berries if desired. Enjoy!
