  • 3 cups baby greens
  • 1 cucumber, sliced
  • 2 carrots, sliced
  • 1 cup halved cherry tomatoes
  • 2 cups canned chickpeas
  • 2 tablespoons lemon juice
  • 2 tablespoons pumpkin seeds
  • Black pepper
  • Avocado oil, to drizzle

Method

  • Step 1

    In a large bowl, combine all ingredients.

  • Step 2

    Drizzle lemon juice and avocado oil, season with salt and pepper.

  • Step 3

    Toss and serve immediately.
