ingredients
- 1/2 cup brown sugar
- 1/4 cup cashew butter
- 1 egg
- 2 tablespoons coconut oil, room temperature
- 2 teaspoons vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1 1/2 cups almond flour
- 1/2 cup dark chocolate
- 1/3 cup raspberries (fresh or frozen)
- Flaky sea salt, for topping
Method
Step 1
Combine sugar, nut butter, egg, coconut oil, and vanilla in a bowl-mixing well. sift dry ingredients together in a separate bowl, then add to wet mixture. fold in dark chocolate chips and raspberries.
Step 2
Spoon 1-inch sized balls of batter (using an ice cream scooper if possible- makes it so easy!) onto a parchment paper lined baking sheet. press balls a bit to flatten, then sprinkle on some flaky sea salt. bake @ 350 degrees for 11-14 minutes, & ENJOY
