- 3/4 cup extra-virgin olive oil
- 3 cloves garlic, thinly sliced
- 3 sprigs fresh rosemary
- 6 Thai chili peppers, sliced
In a small pot, add olive oil. Add the ingredients appropriate to the flavor combinations you are making (described in step 2).
Flavor combinations - - Garlic Oil: 3 cloves garlic - Garlic and Herb Oil: 2 cloves garlic, 3 sprigs fresh rosemary - Chili Oil: 6-8 fresh Thai Chili Peppers - Chili Garlic Oil: 5 fresh Thai Chili Peppers, 1 clove garlic
Turn heat to low. Bring oil to simmer - but do not let it boil. Let the ingredients simmer in the oil for 10 minutes. Let cool before bottling, and enjoy!
