"Tonight I’m enjoying a lovely fresh bowl of my Aussie Lemon Myrtle & Bush Tomato Curry, packed with all the seasonal organic vegetables I could get my hands on {eggplant, cauliflower - this is a test because I’ve a feeling it makes me feel sick, zucchini, spinach, onion and pumpkin} served over organic brown rice, and topped with fresh home grown herbs.
This is one of my favourite recipes - it’s pretty perfectly balanced, with protein from the local white fish, good fats from the coconut milk, complex carbs from the brown rice, and tonight with my entire '5 a day' (actually, 6) ✔️
It also uses some pretty special bush foods, including native thyme, lemon myrtle, and bush tomato - it’s definitely not your traditional curry, but it is delicious! "
