- 1 delicata squash, cut into rings
- 2 tablespoon ghee
- Pink salt and ground black pepper, to taste
- 2 slices bacon
- 2 tablespoon fermented cabbage
- 1 large egg
- 1 avocados, sliced
- 1 cup baby spinach
Method
Step 1
Preheat the oven to 350℉ and line a rimmed pan with parchment paper. Place the cut squash onto the pan, and drizzle with 1 tbsp melted ghee and a sprinkle of salt and pepper. Roast for 35-45 minutes.
Step 2
Next, to make the sunny side up egg, heat 1 tbsp ghee in a pan over medium heat. Crack the egg into the pan and cook for 2-4 minutes. Spoon hot oil over the egg yolk to speed up the cooking process. Remove the egg from the pan when ready.
Step 3
In the same pan, cook the bacon. Turn the heat to medium and add bacon strips to the pan. Cook on each side until the edges curl and the bacon is crispy. Cut the crispy bacon into 1-inch pieces.
Step 4
To assemble the bowl, add baby spinach, roasted squash, cooked egg, cripsy bacon, avocado, and fermented cabbage.
