Melon, Cucumber And Arugula Salad

"Checkmate! This summer melon and heirloom tomato salad was the first course in the lunch I made for my mom's birthday. The dog days of summer have commenced, but I'll hold onto these juicy flavors as long as possible. Ingredients: 3 types of melon, 3 types of heirloom tomatoes, cucumber roll-ups with vegan almond milk cheese, baby arugula, sliced almonds, diced red onion, mint, basil, sea salt, freshly ground black pepper, and a drizzle of balsamic vinegar, lemon juice, and olive oil. "

2 large handfuls arugula

1 cup cantaloupe balls

1 cup honeydew balls

1 cup cubed watermelon

1 small cucumber, peeled, then peeled into think strips and rolled into spirals

1/4 cup toasted slivered almonds

1/4 cup diced red onion

1 tbsp chopped mint

1 tbsp chopped basil

balsamic vinegar, to taste

lemon juice, to taste

olive oil, to taste

salt and pepper, as needed


Start with a bed of arugula.  Top with melon and cucumber roll ups, creating a pattern if deseried. 

Add almonds, red onion and herbs. Drizzle with vinegar, lemon juice and olive oil. Season to taste with salt and pepper and serve.
