ingredients

  • 1 1/2 cup blueberries
  • 1 1/2 cup whole wheat flour
  • 2 eggs
  • 1 teaspoons vanilla powder
  • 1/3 cup extra virgin olive oil
  • 1/2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground clove
  • 1 cup greek yoghurt
  • 1 teaspoon baking powder
  • 1 teaspoon baking powder
  • 1/2 cup honey

Method

  • Step 1

    Preheat oven at 350F/180C

  • Step 2

    In a large bowl add the extra virgin olive oil, yoghurt, honey and eggs

  • Step 3

    Mix for 2 minutes with a hand mixer or whisk

  • Step 4

    Add the whole wheat flour, vanilla powder, cinnamon, nutmeg, ground clove, baking powder and baking soda in a separate bowl. Mix with a spatula until well combined

  • Step 5

    Add the dry ingredients in the wet mixture and mix for 2 minutes with a hand mixer or whisk

  • Step 6

    Add berries and gently fold in the batter

  • Step 7

    Line a muffin tray with paper liners

  • Step 8

    Use an ice cream scoop to divide the batter for each muffin (one scoop per muffin)

  • Step 9

    Bake for 18-20 minutes until golden brown

  • Step 10

    Remove from oven and let them cool for 10 minutes

  • Step 11

    Drizzle some extra honey on top (optional)
