Spicy Chickpea Burrito Bowl

"Burrito night!! This bowl is a riff off my spicy vegan burrito bowl recipe (link in my “recipes” highlights), except with the addition of roasted chickpeas (my fave!!). 😋 Today is #WorldVeganDay and I wanted to share little bit about that. A few years ago, I identified as being vegan and thought that anything less than that was a crime. I pressured my friends, judged anyone who wasn’t vegan, and was an all-around awful person about it. When I faced health issues and transitioned back into vegetarianism, I found myself eating my own words (no pun intended!!). Now, as someone who identifies as plant-based, I’ve learned that pressure, judgment, and a bad attitude doesn’t convince ANYONE to do anything. My friend Laura @thefirstmess once tweeted, “Lead with positivity + light”, and I repeat that mantra to myself all the time. My goal here at Well and Full is to lead by example. I don’t judge or criticize anyone if they eat differently than me. Instead, I want to show how easy, fun, and delicious plant-based food is! I stand by the fact that vegetable-focused eating is for anyone, and I’ve got the recipes to prove it. 🌿 Cheers to that!"
