October means pumpkin time and I love the idea of using pumpkin purée for these waffles

Ingredients:

2 cups all-purpose flour
½ teaspoon salt
1 tablespoon baking powder

2 tablespoons sugar

2 eggs
1 ¼ cup of almond milk
½ cup of pumpkin purée
½ stick salted butter (melted)
1 teaspoon vanilla extract

Directions:

In a large bowl, sift together flour, salt, baking powder and sugar in a bowl. Preheat waffle iron to desired temperature. In a separate bowl, whisk together the eggs, milk, melted butter, purée and vanilla extract. Pour the milk mixture into the flour mixture; mix until blended. Ladle the batter into the waffle iron. Cook until golden and crisp!
