I know, I told you that I was going to post my smoothie but I was so unhappy with the way it looked, that I decided to give it another try tomorrow. These potatoes are simple to make and I haven't met anyone that didn't like potatoes with sour cream, Tzaziki or other stuffings, so this one is definitely a winner!"

ingredients
- 4 large russet potatoes
- 1/4 cup sliced green onions
- 2 red peppers, diced
- Sunflower seeds, to taste
- 1/2 cup Fresh herbs (like cilantro or chives)
- 1 cup vegan sour cream
- 1/2 cup diced cucumber
- juice of one lemon
- salt and pepper
- 1 garlic clove, minced
Method
Step 1
Preheat your oven to 400 ˚F. Place the potatoes on a lined baking tray and bake for approx. 40 minutes, or until tender.
Step 2
Meanwhile, make the the tzatziki by placing the sour cream, cucumber, garlic, lemon juice in a small bow. Season with salt and pepper and set aside.
Step 3
When the potatoes are baked, remove from the oven and slice lengthwise. Pull the sides apart to open it up & top w/ Vegan Tzatziki, green onions, red peppers, herbs and seeds (or any of your favorite toppings)
