We had so much fun making these bright & sunny pull apart cupcakes with Simple Mills! Simple Mills baking mixes are Grain Free, Gluten Free, Soy Free and Non-GMO so we followed their lead and used all natural turmeric to tint coconut oil based organic frosting the perfect shade of yellow. 

Makes 12 cupcakes

Ingredients

1 box Simple Mills Vanilla Cupcake Mix

3 eggs

1/3 cup vegetable oil

1/3 cup water

1 tbsp vanilla extract

1 jar Simple Mills Organic Vanilla Frosting with Coconut Oil

2 1-inch pieces of fresh turmeric, peeled and grated

1 tbsp hot water

1 tbsp melted coconut oil

1/2 cup chocolate sprinkles or chocolate covered sunflower seeds

Directions

Preheat the oven to 350˚F and line a 12 cup muffin tin with cupcake liners. In a large bowl, whisk together the eggs, vegetable oil and vanilla extract. 

Add the Simple Mills Vanilla Cupcake Mix and stir until combined. Divide among the prepared muffin tin and bake for 15-20 minutes, or until a toothpick comes out clean. Let cool. 

Meanwhille add grated turmeric, hot water and coconut oil to a bowl and let steep for 5 to 10 minutes. Strain into a bowl of the Simple Mills Organic Vanilla Frosting with Coconut Oil and stir to combine. 

Add the cooled cupcakes to a plate, shaping them into a flower.  Using 1/3 of the yellow frosting, apply a thin coat of frosting all over the cupcakes.  Prepare a homemade piping bag by taping the corner of a regular plastic bag, then cutting a small notch in it (where the tape is). Add the remaining frosting to the bag, then with the notch on the bottom, pipe petals all over the cupcakes, leaving room in the center for sprinkles

**Note: We used a recycled plastic yogurt lid as a guide for the center. 

Add sprinkles to center of flower and enjoy!
