ingredients

  • 3 pieces pita
  • 1/2 cups olive oil
  • 2 tsp salt
  • 2 pieces medium hearts romaine lettuce
  • 1 pieces medium cucumber
  • 2 cups cherry tomatos
  • 5 pieces scallions
  • 1/2 cup sliced radish
  • 2 cups chopped fresh parsley
  • 1 cup chopped fresh mint
  • 1 1/2 pieces juiced lemons
  • 1 tablespoon vinegar
  • 2 pieces minced cloves garlic
  • 2 tsp ground sumac
  • to taste (recipe below) pepper

Method

  • Step 1

    Preheat the oven to 350°F (180°C). Slice the pitas in half to make 6 thin rounds. Place the pitas on a nonstick sheet pan. Brush with olive oil and season with salt. Bake for about 7 minutes, until the outside is golden brown. Let cool until they become crispy.

  • Step 2

    Chip the romaine hearts into small pieces. Rinse, drain, and add to a large salad bowl.

  • Step 3

    Seed the cucumber, dice it, and add it to the salad bowl.

  • Step 4

    Dice the tomatoes and add them to the salad bowl.

  • Step 5

    Mince the scallions and add them to the salad bowl.

  • Step 6

    Add the radishes, parsley, and mint to the salad bowl and toss to combine.

  • Step 7

    prepare the dressing : In a a small bowl, combine the remaining ½ cup (120 ml) of oil, the lemon juice, vinegar, garlic, sumac, salt, and pepper . whisk until well-combined. Pour the dressing over the salad.

  • Step 8

    Break the crispy pitas into small pieces and add to the salad. Toss well.
