ingredients

  • 235 gram Red Lentils
  • 120 gram Quinoa of your choice, I used tricoloured
  • 1 can Coconutmilk
  • 2 tablespoons Tomatopaste
  • 1 teaspoon Smoked Paprika or Paprikapowder
  • 1 1/2 teaspoons Garam Masala Spice
  • 1/2 teaspoon Currypwder
  • 1 teaspoon Garlicpowder
  • 1 1/2 teaspoons Salt
  • 600 milliliter Water
  • 100 gram Fresh Spinach
  • The juice of one Lemon

Method

  • Step 1

    Add the lentils and the quinoa in to a pot. Add the coconutmilk, water, the spices, the salt and the tomatopaste to the pot. Set the heat on medium and put on the lid. Let it cook for 15 minutes.

  • Step 2

    After 15 minutes, take of the lid and turn the head down to low. Stir and make sure it doesn't stick to the pan. Let it sit on low heat for another 5 minutes until some liquid has evaporated.

  • Step 3

    Now add the lemon juice and stir it in, it really takes the dish to the next level. Add the spinach and stir till its wilted. And just like that you are ready to serve this easy lentil and quinoa pot.

  • Step 4

    Use the leftovers the next day, take them to work, heat them up and enjoy. It only gets better!
