ingredients
- 4 slices stale bread
- 4 tablespoons nut butter
- 1 teaspoon chia seeds
- 1 cup mixed berries
- 1 cup non-dairy milk
- 1 tablespoon ground flax seed
- 1 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- 1/2 tablespoon coconut nectar, optional
Method
Step 1
In a large bowl, add milk, flax seeds, cinnamon and vanilla and let sit for about 5-8 min. - On low heat, add berries, coconut nectar (if using) and chia seeds to a pan and let cook down. Allow to slightly thicken and mash berries with your spatula.
Step 2
Make 2 sandwiches, with nut butter of choice and your berry mixture. - Place the sandwiches into batter, flipping and spooning over to make sure all sides are soaked. - Heat a nonstick pan on medium heat and place the sandwich onto the pan and let cook on both sides for about 1-2 minutes until golden brown.
