ingredients
- 2 apples
- 2 orange zest
- 1 lemon zest and juice
- 14 ounces sultanas
- 15 1/2 ounces golden raisins
- 2 teaspoons ground mixed spice
- 1 teaspoons ground cinnamon
- 7 ounces soft brown sugar
- 2 1/3 ounces butter
- 8 tablespoons brandy
Method
Step 1
Peel and core the apples and finely dice.
Step 2
Juice and zest the lemons and zest the oranges.
Step 3
Place the apples in a large pan. Add the orange zest, lemon zest, lemon juice, sultanas, raisins, spices, brown sugar and butter.
Step 4
Heat over a low heat until the butter has melted, stirring regularly so that the dried fruit is all coated in the melted butter and everything is evenly mixed.
Step 5
Set aside to cool.
Step 6
Stir in the brandy.
Step 7
The mincemeat can be stored in the fridge for a few days. Alternatively, transfer to clean, sterilised jars where it can be stored for several months.
