Zucchini brownies

ingredients

  • 1 1/2 cups palm sugar
  • 1/2 cups canola oil
  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 1/4 cup dairy free, Cocoa powder
  • 2 cups peeled, shredded zucchini
  • 2 tsp vanilla extract
  • 1 tsp salt
  • 1 1/2 tsp baking soda
  • 3/4 cups dairy free chocolate chips

Method

  • Step 1

    Combine all the dry ingredients : all purpose flour, whole wheat flour, baking soda, salt and cocoa powder.

  • Step 2

    In a large dish, whisk the canola oil and sugar together.

  • Step 3

    Add zucchini to the oil and sugar mixture.

  • Step 4

    Slowly fold in the dry mixture, little by little.

  • Step 5

    Add Vanilla essence and chocolate chips. Mix lightly with your hands.

  • Step 6

    Pour this mixture in a lined 9 X 9 baking tray.

  • Step 7

    Bake in a preheated oven at 350 degrees F for 25-30 mins.

  • Step 1

    The best way to test if a cake is cooked is a knife coming out clean through it. Please use that here too.

  • Step 2

    I find that my baked goods are done a bit before the time any recipe specifies. You are the best judge of your baked product. Decide the time according to your oven and the size of your baked product. Smaller, flatter goods take lesser time!

  • Step 3

    I've been asked this many many times... so.... No, there is no substitute for Zucchini in this recipe.

  • Step 4

    I've used palm sugar in this recipe but you are free to use any sugar you might have at home. I personally prefer palm sugar over others so I tend to use that more often.

    Use dairy-free cocoa powder and chocolate chips to make these vegan!
